Normally, you would send the I-134 to your fiancée to submit with the other papers. Follow the instructions your fiancée receives for her visa interview.
If you are employed in a permanent position with a sufficient income to meet the annual minimum at the time of the interview, then you should be O.K. Make sure you submit a letter from your new employer stating that the position is permanent and listing your current salary. They may ask to see tax returns and W-2’s for the last 3 years, so it would be a good idea for her to have those available just in case.
The K-1 visa petitions are valid for 120 days after approval, but are routinely extended by the embassy. As long as the petition is still active and you haven’t abandoned the process, the embassy should automatically extend the validity period as long as it takes to process application and issue the visa.
