They will usually accept legible photocopies of any original documents except INS forms or documents created specifically to support your petition, e.g., employer letters, written statement of intent, etc.
Make sure that copies are legible and copy both sides of the document. If you submit a photocopy of your passport, you should copy all pages that contain any information. You should also include the following statement, signed and dated, in your cover letter:
“Copies of documents submitted are exact photocopies of unaltered original documents and I understand that I may be required to submit original documents to an Immigration or Consular official at a later date.”
Your fiancée should have the originals of anything you submitted copies of when she goes for her interview and when she enters the country, just in case they ask to see them.
