Even when you convince them to take cash, you often still have to secure the room with a credit card. The reason being, if there are any damages they have a way of billing you. Likewise, I suspect that you can pay cash for a plane ticket, but don't be surprised if they ask you to secure it with a credit card. Maybe I'm wrong, but I don't see them letting you off that easily.
One thing you might look into is looking at non-refundable tickets. They are usually cheaper, and you might not be penalized if you don't take the return flight. You're just out the cost of the return fare.
